I'll go first: I love open shelving in kitchens. Yes, things get dusty, but I don't mind a little extra cleaning to be able to see what's in the kitchen.

Nothing makes me sadder than seeing a cute vintage house with the original features, especially vintage kitchens and bathrooms, ripped out and replaced. If you want a boring white/gray box, please go buy a boring white/gray box and leave the character and charm for those of us who appreciate them.
@losfrangeles have you watched the HGTV show Small Town Potential? They do a great job preserving the charm of some of these old houses around the Hudson Valley. My favorite episode is a Tudor-style home that looks like something out of a storybook — a good balance of making some modern upgrades while still keeping true to the home’s architecture. I do think there’s a nice way to do the all white/neutral look but I hear you on wanting to preserve the charm of original homes!
I stopped watching HGTV when one of their longtime hosts entered into a business arrangement with a dangerous convicted felon (I swear I am not making this up). But I’ll look up that show!

Currently I'm TOTALLY here for color drenching a room! It's such a fun, unique take on painting rooms and to me really gives a WOW factor.
I absolutely and 100% against furniture arranged on the diagonal!
