When we are super busy I like to make a Mexican style shredded beef or pork in the crock pot. I'll put half of it in the fridge to make quick tacos with and freeze the rest for later.

During finals week I made a huge pot of lentil and veggie soup that I could heat up quickly. I took a tip from this site and froze half in muffin tins so I had individual portions I could grab quickly. It worked great!

Oh dear, I made the most amazing icecream from David Leibovitz's book "Ready for dessert". It's white chocolate ginger with dark chocolate covered peanuts. If I had a 15 lbs. block of white chocolate I would be making vats of the stuff!

I bought this same pot in the robin's egg color about two years ago and the enamel is chipped all over the place. At first it was just on the outside of the pot but recently the inside has chipped in a few places and I'm nervous to even use it. I'm really sad about it, I had really high hopes. You get what you pay for with these.

Wow! This is a really heated topic, that's good. This is a discussion we need to be having. I believe that the money I spend on anything I buy is essentially a vote. We live in a capitalist society and need to be conscious of where we spend our money. I have the luxury of being able to drive a half an hour twice a month to a farm to buy ALL of my meat and dairy. I also have a store in my neighborhood that only sells food that is grown/raised/prepared within 250 miles. We frequent farmers markets in the summer and have a garden. Food is a priority to me and I sacrifice a lot to make sure we eat with a conscious. We are a young family living on one very middle class salary. I think this has more to do with priority than anything else.....

I used to have so much trouble with pantry moths! I've been 95% effective in keeping them out by storing all my grains, flours and nuts in the fridge. We have also drastically cut back on processed snack foods in our house so there is rarely more than one package of crackers or other grainy products around to attract or hatch new moths. I also store all my pasta in glass jars so I can see and evidence of bugs and get rid of it right away. I just started The Cure from Kitch and after cleaning out my pantry this week was sooo excited not to have found any moth ridden food!

I tried the slow cooker method super bowl weekend so I could do some baking and was really bummed by the results. After 8 hours on high in my slow cooker I had to finish my pork in the oven because it never got hot enough to pull apart. If only I had two ovens.......

At my house we are big fans of easy bean and cheese burritos. Sometimes we may get creative and add an egg or sauteed jalapeno, really anything extra that might be in the fridge. On nights that we have time but no energy our burrito may turn into a loaded baked potato with black beans, salsa and cheese

lmrinc is totally right on her food network link!!!! That Tyler Florence recipe is out of this world. My friends and family worship that recipe and I've made it so many times. I have started to add chipotle powder to my sauce for added heat and depth. Happy Cooking!

I'm so excited to be talking about sugar cream pie! I grew up in Indiana and have had plenty of this amazing dessert in my day. My mother and I have decided that the best sugar cream pie comes from Mrs. Pucket's pie shop in Kokomo. I've seen a lot of recipes out there and haven't found one as good as Mrs. Pucket's. A true Hoosier SCP does not have brown sugar in it and I believe that it needs to be cooked on the stove before it is put in the pie shell and baked.

I have been told that if your water bath time is over 20 min, you don't need to sterilize your jars first. After buying about 60 bucks worth of home canning books I found the USDA online guide to home canning and it ROCKS!
