DId you add the cream? Dairy cuts spiciness much more effectively than water or stock. Try serving with a dollop of cream or sour cream, and some extra cheese.

I might be showing my ignorance here, but is it cow's milk you're allergic to, or all milk? Trader Joe's has a sheep's milk feta (Pastures of Eden, I think it's called?) that I, a fellow feta lover, am obsessed with myself. My friend who's allergic to milk can eat it, which is why I suggest it.

Akay, I roast chicken in a lasagna-sized Pyrex all the time. Or just a metal lasagna pan. Tasty as can be. And I'm not sire if I know how to carve it "correctly," but i get the meat off as elegantly as i can! Meat thermometers are inexpensive, and the giblets... It's not so bad! You can do it!
