Thanks to MizK for the recommendation of the 36-hour chocolate chip cookies we adapted from David Leite's recipe. We've had many people tell us those are their favorite chocolate chip cookies ever, and they can all eat gluten.

I have used xanthan gum for years, along with guar gum. Recently, however, I realized that I am one of those folks who experiences problems with it. (And it's not the corn, since corn treats me fine.)

I wrote a post about this last night, with a recipe for multi-grain muffins without the gums. I'm realizing that -- like Lona said -- you really don't need the gums for baking, as long as you have the recipe's ratios right.

Kathryn, the oil is really fragrant afterward. You can use it to sauté meats or greens (I love it with lacinato kale). You can also use it again to make potato confit, says Danny.

Betsy, feel free to use any herb you like here. I agree that you want something a little woody, like thyme, because it will stand up to the cooking well.

Thanks for posting the link to my site. I'm happy to help anyone who's new to gluten-free baking. It really isn't that hard, once you get the knack. (Although I still haven't conquered gf croissants yet. That may be the dividing line!) I have close to 200 recipes on my site, and I'll be happy to take requests! We're all in this together.

By the way, cornstarch should be gluten-free, so your friend can have your fudge! (Watch out for cross-contamination in certain brands, however.)
