I buy bison for burgers instead of beef. Its very lean so I like to add some sauteed mushrooms (chopped fine) to the meat and then grill them. We're lucky to have a great meat purveyer where we can get bison ribeyes which are heavenly!

Ratatouille and Caprese salad tonight, Zucchini fritters with tzatsiki & steamed mussels with no-bake bread for dipping tomorrow. Sunday is up the air but I'm sure a stop at the farmers market tomorrow will inspire me.

Love, love, love saffron! My local spice shop has excellent quality saffron so I dont mind paying the price for it. I buy mine for paella and then usually have a bit left over. Try this recipe for a dipping sauce. Origionally made it for artichokes but now put it on anything!

I put the oil in the pan and pop it in the oven for a good 20 minutes to heat up. Take the pan out, throw in some herbs (rosemary) then potatoes. heating up the oil really gives them a good crunch!

Made the following salad dressing last week. Umami at its best!

3 T Red Miso
1 T Tahini
juice of 1 small lemon
1 T agave syrup
1/4 C water
1 clove garlic
a bit of grated ginger (to taste)
3 T almonds

wizz it all up in a blender

The almonds thickened it up nicely. Coated ever nook of my salad greens.

We're having minty peas tonight with grilled chicken breast. Thow a bag of frozen peas into boiling water for 2 minutes (add a couple of garlic cloves for a slight hint), drain and wiz up in a food processor with 2 packages mint, some salt and olive oil. Great accompanyment for grilled meats and potatoes.

This is exactly how I make them. Wringing out the extra liquid is essential for crispy cakes. I individually freeze them on a cookie sheet and then pack them up once they are solid- no need for wax paper.

Chicken in Milk, roast potatoes (British Style) and sauteed kale tonight. Nieman Marcus white bean/chicken chili with leftover chicken. Going to make some superbowl classics such as 7 layer dip and wings on Sunday. Also have lots of beans so maybe some black beans in my slow cooker with a ham hock.
