Beans, lentils, tomato sauces, and shredded meat all come to mind. Raw or par-baked pizza or stromboli with nondairy cheese. Cooked steel-cut oats can be frozen in portioned blocks that she can throw in the microwave for a quick breakfast (or dinner, if she's like me).

Honestly, I think I would play up the leftovers. Potato cakes, turkey and veg frittata, and cranberry sauce on English muffins are all pretty easy.

@fergmelk: On a similar note, the Hurst's brand HamPeas soup mix comes with a "ham flavor" packet that is strangely vegan. It is also awesomely delicious and a favorite of my husband's during Lent.

I love curry with tofu. You could brown the tofu and then simmer it with some milk (almond works great), the curry paste, and some chili flakes. I also like to add a sprinkle of brewer's yeast at the end - it gives it a nice nutty kick.

Now I wish I weren't eating this stupid salad! :)

I agree with kristian. Try it again, but leave out the bit about the gelatin. That method always works well for my husband, particularly when he's eating ground turkey in something. ;)

What about drilling a hole through the tray and bowl and securing it with a screw and wingnut? It would be removable, but secure.
