If I have sweet, young, tender greens Yu Choi Sum, I'd like to blanch it in boiling salted water and oil for less than 1-2 minutes until just start to re-boil again. Take them out nicely on a plate and put oyster sauce on top. Yummy. Great for soup noodle topping.

Chinese water chestnut. Peel the skin. Great with soup, dumplings, chinese style steam ground meat dishes. It gives a little crunchy texture in your food. I won't recommend to eat it raw.

I don't know what is behind those ingredients with scentific names. Did they add any arsenic, cancer causing agents to mass produce the products so businessmen can make quick money.
I eat fresh meats, fruits and vegetables. I buy sauces and condiments from certain countries. Certain countries food safety news would make me scare. Hope those contaminated or with questionable ingredient products have not reach our store selves.

Other food safety authorities are not as good as in USA. I hope those questionable ingredients might have added to the products have not reached our store shelves.

Like I said, stick with popular brands and buy fresh meats, produce and vegetables.

If you don't know, stick with popluar brand that comes in many different flavors. It might have English name and read the label/picture to see what is in the package/can.
