I pared down clothes on hanger, now that I would have to be sharing a closet. We also had a very serious discussion about which pots and pans are Very Special and require Certain utensils.

There was also paring down overlapping books, and whose version would be kept. But we didn't just chuck them all -- six years later, we still have four copies of "Pride and Prejudice."

We moved to a larger unit in the same building. We thought we were *just* moving to a larger space, but the move from the back of the building to the front was just ... AMAZING.

The back of the building was in a flightpath for helicopters, and we used to be woken up every Saturday at 6 when some general would fly by. The front of the building was some motorcade route, but at least those are marginally quiet and more interesting to watch than the traffic backups in the back of the building.

They also offered us a "premium" apartment with granite countertops and fancy appliances. But in a galley kitchen with less than three feet of actual space, it was not worth the additional money. Cakes bake at 350, whether it's a Viking or a Magic Chef.

Calphalon used to make these heat diffusers which were just flat discs of hard-anodized aluminum you put over the burner. They were super smooth, and prevented the kind of scratches Andy is talking about.

The downside is that they did diffuse the heat (requiring more energy for cooking) and they were really smooth -- like, full pot of food goes sliding off smooth.

I like Bittman's books too, but for a real novice they can be a challenge because they do not have any pictures. I gave a boyfriend a cookbook geared for children and it worked out well -- lots of pictures, focus on technique, suggestions for variation. We had a long and thoughtful talk BEFORE I bought the book so he didn't think I was being condescending and terrible.
