In defense of spaghetti tacos-- my brother-in-law made something similar for his kids and it was actually really good kid food. The crunch of the taco shell brought something different to the usual spaghetti-and-meat-sauce taste. I'd probably throw in some frozen spinach for some green, and maybe play with the spices. But it's not as gross as you'd think!

My local health food store has organic peanuts that they will grind up for peanut butter. It works out to about $0.21/ounce, and they will even let me reuse containers to fill with PB.

@qhartman, the reason regular PB is so smooth is because of the hydrogenated fats in it. If you want something without sweeteners, I think you're stuck with grainy-- at least at my grocery stores. Here's a link to a Cook's Illustrated taste test--

Great post! I don't eat much meat at home, so I suppose I'm a flexitarian. I also started a cooking blog, http://www.lauranav.com that has a lot of meatless options.

I'm huge on bars because I don't like all of the cookie sheets in-and-out of the oven (and the burning risk!). I'm just waiting for my mom to make me my annual mint brownies. :)

I made these awesome Cranberry-Pecan Oatmeal bars that were so good. http://lauranav.com/2010/12/cranberry-pecan-oatmeal-bars/

Bake the biscuits in the butter? Betty Crocker, you are a GENIUS.

I'll be trying these as soon as I check my cholesterol again.

I have a great recipe for Salmon and Chickpea salad, using canned salmon. It's a perfect pantry meal, and also has some Omega-3s to make you feel healthy.

That Rachael Ray recipe is a lot like Paula Deen's Pine Bark-- an insanely easy recipe involving Saltines, butter, and chocolate. And it's also simple to modify-- for example, adding chopped nuts on top, or using a darker chocolate (she calls for milk chocolate and I prefer dark.)

My childhood favorite is cheesy spinach; you could probably bring it warm and keep it covered with foil. It's quick and delicious.

I'm planning on breaking down my turkey-- butterflying it, I think-- before roasting so that I can control how it cooks. I may lose some points on presentation, but should win them back on taste!

I have a yellow Le Creuset that I keep on my range, mostly because it's so big and I rarely need all four burners.

Birmingham chef Frank Stitt owns some of my favorite restaurants. His cookbook, _Bottega Favorita: A Southern Chef’s Love Affair with Italian Food_ is, admittedly, a very intimidating book. It is also beautiful, with photographs of local Alabama farms and produce. A link to it on Amazon-- http://ow.ly/2Bd9l

I just posted a blog post of simple pizza dough-- and I love to top it with pesto. This peanut sauce idea is fantastic, but I don't live near TJ's. I'll have to get on this!
