if you want to avoid streaks and fingerprints, you have to put some kind of oil on it. Baby oil is okay, but I'd use mineral oil to get away from the fragrance. I use the faster 'American' version--medium heat, buttered cast iron skillet and stir until soft-set. I add 1 tsp chipotle paste (just put the peppers & adobo sauce in the blender) and goat cheese at the end and serve on warm corn tortillas. One thing that can also help soften bread is to substitute 1/4-1/2 cup of mashed potato flakes for flour in the recipe. It rankles me to use them for anything, but this trick works very well--and it's quick. I thought about ricing some boiled potatoes for this purpose, but it throws off the liquid ratios and always seems to produce a chunkier bread.
