Tonight, I'm baking off a pizza spaghetti casserole tonight that I prepped earlier in the week. Tomorrow, I'm going to make hard boiled eggs, as I do every Sunday, some bakery style blueberry muffins (both for breakfasts this week), a broccoli and sausage pasta dish from "How to Pick a Peach" (the hubby's lunch for this week), a crock pot stroganoff from "Make It Fast, Cook it Slow" (for supper and lunches), and quite possibly, those Homemade Snickers Bars that have been making their rounds on Pinterest and the blogosphere! Margi-Invest in one of the plastic pot scrapers from a place like Crate And Barrel for a buck or two. I use mine religiously and throw it in the utensil holder in the dishwasher when it needs to be sanitized. It's a lifesaver for foods that get stuck-on no matter how you prep the pan or dish. I think it would be easier to say, "what's not cooking" for me! Hahaha. I plan to make a pork shoulder with Stonewall Kitchen's Pulled Pork Simmering Sauce (I purchased this last week while visiting York, Maine. *swoon*) for sandwiches and meals during the week. For lunches, a slow cooker chili, or perhaps slow simmered on the stovetop. For the big game: Detroit Honey Hot Wings from Allrecipes, a loaded bacon cheeseburger dip, deviled eggs, and rolo cake mix bars. I also need to make sandwich bread and a cinnamon swirl bread. I bought some of those pre-cut parchment paper liners on Amazon and use them for SO many things! Love using them to line my pans when roasting veg! Tip: Roast Vegetables on Parchment Paper for Easier Transfer & Cleanup |

Malted blueberry waffles in my new waffle iron (my old one bit the dust a few weeks ago), taco dip for the playoffs tonight, some hard boiled eggs for the week ahead, and maybe some sour cream pancakes with maple pecan butter from an article I read in Country Living magazine. I plan to make a slow braised brisket tomorrow for supper-and we'll have enough for leftovers for the majority of the week. And maybe some cheese biscuits from the cookbook "At my Grandmother's Knee" to have with country ham for a treat during the week. I've also been contemplating making the peanut butter fudge cookies posted on the The Kitchn's website last year. I'm really hungry...perhaps I should go make myself some breakfast....... Not really a resolution, just a know-that-I-need-to-do-this, I have to cook at home more. Since starting a new job just before the new year last year, I've been horrible about take out in the last year. So, this weekend, I will do the same as I did last weekend to get prepared for the week ahead. I always boil a pot of eggs for snacks during the week, I'm going to make the pumpkin cinnamon chip granola bars from Brown Eyed Baker and some maple nut muffins from my new "Dishing Up Vermont" cookbook that my hubby gave me for Christmas.
