Might I also suggest--make a list of what you have, and stick it on the door with something to write with, so you can see at a glance what you have and cross it off as you run out. I grew up thinking of spaghetti squash exclusively as something sweet--I still occasionally make a couple of jars of spaghetti squash preserve, which I use as filling for little sweet empanadas, or which can be served as a sweet with chopped nuts of some sort. Ensalada Chilena--slices (at least in my house we did slices, other people do cubes) of tomato, very thinly sliced onions, cilantro, oil and a squirt of lemon. Very simple--and I'm sure many other places lay claim to this as well--, but it's heavenly in the summer. Virtual CSA Box: Tomatoes |
