To answer an earlier question, yes this is the same coconut oil that caused eyebrows to be raised when people learned how fat-ful their movie popcorn was. Whether or not you think coconut oil is healthy is beside the point - it was more that movie popcorn, at least back just a few years ago before the studies came out, seemed like a lower fat/lower calorie choice when at the movie theatre snack counter. But no:

But a medium size movie popcorn at AMC, the second largest theater chain, also pops in coconut oil but has smaller serving sizes. Its large popcorn has 1,030 calories and 57 grams of saturated fat. That's like eating a pound of baby back ribs topped with a scoop of Häagen-Dazs ice cream—except that the popcorn has an additional day’s worth of saturated fat.

"That knobbly head of celeriac (celery root) had been languishing for over a week, and it was high time to put it to use" HaHaha! Celeriac is a great storage crop, I have several pounds languishing in the bottom of my vegetable drawer and its been over 2 months. I always think they will take too much time to peel but you're right, its really not tough skin and peeling is pretty quick.

YoNella, you would not want to cook the quinoa first, because this granola recipe is for a dry product that you can store in a jar. If you cooked it in liquid or soaked it (or any of the other ingredients, like the oats) you would be inviting spoilage. She is adding it raw - a little unusual but not unheard of. I would guess that perhaps a tablespoon or two at the most, for a little crunch. I want to mention that quinoa purchased in North America typically has its natural coating of bitter saponins removed, but if you live elsewhere then do check - you would not want to eat it raw in that state.
