Take the time to hand dry them completely. My wood board has developed cracks from leaning it up on one side to air dry. Most of the board dried well, but the lower edge stayed wet too long.

I bid on and won a dinner party catered by a wonderful Seattle chef, Ethan Stowell. We threw the party for some close friends who where moving across the country and invited some of their closest friends. Our friends that were moving away showed up to the party with their car packed and headed out across America the next morning. 12 of us where there and we had 10 or 12 courses of food. Wonderful food and wine, but more importantly, a wonderful time to bask in the love of friends.

One similar fix I have used is a small magnet. If the door isn't too heavy and isn't pulling itself open, sometimes a little magnet is all that is needed to keep it shut. Using it avoids having to use the extra force to open the door with roller catchers (and the popping sound every time is opens or closes).

Any hints on how to core the apple while leaving the bottom intact? I have done a few recipes where this was requested, but I have never felt like I have done it correctly.

For espresso try Vivace, they have a few locations in the city. It is my favorite by far. http://www.espressovivace.com

Another vote for Theo's Chocolate. While you are there, you can cross the street and try Brouwers. They have 60 beers on tap with a big emphasis on Belgian beers. Their bottle selection is amazing. It is a true beer hall. http://brouwerscafe.blogspot.com/

Washington recently changed its laws regarding craft distilleries. I know some are opening up in the outlying areas, but I haven't heard of which are worth a visit yet.
