mayo, unless homemade, freaks me out. however, growing up in philadelphia, i worked in the snack bar of a country club. this was the way i was taught to make grilled cheeses, and it just works. perfectly crispy gold brown results every time.

Oh, yes!!! Francoise! She is fantastic and conducts her classes in Frenglish, depending upon the students. I took a several week course but she also does day or several hour long courses--and you get to enjoy what you made. Generally, she send you home with recipes, too. I finally made this and it. was. the. best. cabbage. ever. The burny-bits tasted like Brussels sprouts after getting a nice pan sear on them. The bacon scent perfumed every bit of the cabbage. i served this over smashed potatoes with garlic. To die for.

I made this several times last year and am now going back to it (after tons of butternuts in our CSA) because it was so insanely good. The simplicity of the ingredient list is a little off putting--the result has a depth of flavor that I was surprised by. I cook the squash a bit longer and then pour over shell pasta. It is autumnal comfort food at its best.

Chickpea croquettes! A favorite vegan dish of mine:

Pulse 8 rice crackers in the food processor. Add several sundried tomatoes, a can of drained and rinsed chickpeas, 2 garlic cloves, a handful of parsley, a heaping tablespoon of tahini paste, cumin and paprika, and give it all a good whirl until a nice dough is made. Add some oil if too thick, some cornstarch if too mushy. You want a sough that forms nice, meaty patties. Divide into 8 little patties and dust with cornstarch. Lightly fry in a pan. Enjoy!
