We came up with an amazing stuffing strata this year that's vegetarian but tastes amazing! You would never know it wasn't cooked in the turkey. You layer all those traditional thanksgiving-y, stuffing-y flavors (celery, onion, sage, thyme) with bread that's been soaked in egg, milk, wine, and mustard, and then bake it in a casserole, and it comes out amazing. So rich and moist. It's definitely the best veggie stuffing I've had, since it doesn't taste like vegetable stock the way most seem to.

Don't know if it counts as non-traditional, but we make our turkey in an oven bag! the flavors are relatively traditional (lots of herbs, garlic, and butter) but I think the way we prepare gives amazing results for very little effort!

We tried them for the first time during last year's season and ended up roasting them, then tossing them in a salad with lettuce, hazelnuts, and a nice sharp goat cheddar! Really tasty, and yes, possibly fartogenic-- half of our group of friends noticed it, half didn't!

My current favorite butternut squash recipe is a pasta tossed with roasted cubes of it, as well as spinach, parmesan, and bacon! Yummy. The squash gets wonderful texture from roasting that really goes well in the pasta.

We're thinking of trying a sort of brazilian mixed grill thing soon, spicy meats and garnishes sounds like a party to me! In the meantime, some of our favorite more mexican kinds of things are chile-lime-herb steak tacos, tacos with scrambled egg, feta, and avocado, and tacos with mushroom, potato, and chorizo!

I love pearl barley! For a long time I had only ever eaten it in soups, but I bought some for the purpose of trying it in another context, and one night we winged it and tossed it up with the cauliflower, mushrooms, pancetta and parmesan we had laying around, and it was delicious! we've made the dish again many times since.

I just started experimenting with fennel and my favorite way with it is to braise it in chicken broth with lemon, parsley, shallots, and red pepper flakes, then toss it with pasta, bacon, and parmesan. Sooo good!

I love them baked into and sprinkled on top of a seeded loaf of bread-- just a couple mixed in with some other seeds. Also in italian sausage, on grissini, and tossed once in awhile into a dish! I like it alongside the fresh fennel in this dish:
