My mother was an avid Julia Child fan and cooked many of her recipes. For our birthdays, she would cook our favorite meals. I would ask for Thanksgiving Dinner in May, my bro would ask for Fruit de Mer and my sister, Coq au Vin. Lucky us. This week we commemorated the 5th year of her death. Thanks, Vida.

Sometimes it's better to leave some of the nicks in the blade instead of grinding so much knife away because the blade loses its taper if ground down too much. As a rule, I don't think the angle should be 20 degrees. Some knives are only beveled on one side. Thicker knives have a different bevel than thin knives. The important thing is to keep the angle consistent. I've been sharpening for over 30 years and I'm still learning!

I really have a hard time around animals I know are doomed. I have been a vegetarian for 25 years. It's a little about health but mostly about my love for animals. I respect meat eaters who actively participate in the raising, killing and slaughtering - not someone who will only eat a slab of prepackaged flesh. Anthony Bourdain is an example of someone who talks about going to the source and not being squeamish about the visuals of dead animal parts.

I'm a protein freak and crave eggs, beans, tofu and nuts. And I have to admit, I'm always looking for something to simulate the texture of meat. But a piglet, a lamb - just can't deal with eating him or her....

Knives are a personal thing. Buy one from a store that lets you hold it and see how it feels. I like the feel of a Global but it is light and some people don't like them. My favorite knife these days is the Kikuichi (www.kikuichi.net). Lots of varieties to choose from. The santoku knife is the one I use the most. I think the Victoronox knife is the best deal for the price.

Heather, if you live in NYC, bring your knife to me to sharpen. I also sharpen twice a year in Berkeley and Oakland CA.

I would like to test the paring knife. Can't wait to get my hands on it and see how it twists around a tomato stem site. Being sharp isn't really a test of how good a knife is, it's how it holds the edge. I'm curious to look at the metal and see its striations, feel how comfortable the handle is and get a close look on how its constructed. I want to harshly chop something on a board to see if that dulls it easily. I basically want to review it on a functional and aesthetic level. I'm always curious about new knives on the market, especially when they claim to be the "best".
