My Syrian grandmother was our daycare as children. These were lunch much of early childhood. I can taste them now while looking through these photos. Like KERRSLP said, no currants, and my Situ omitted the Baharat seasoning and pine nuts. The simplicity of grape leaves, meat, rice, parsley, mint, lemon and garlic were all that was needed. Accompanied with thick, homemade, plain yogurt; we were in heaven!

I can't remember her using jarred grapleaves, but I've had many tasty renditions that used jarred leaves.

I've always done this until recently reading that it's not always necessary. So, I made eggplant last night (picked from my garden) and cooked it without the pre-salting. The eggplant was lovely, however just slightly bitter. I think I'll be take the extra step to salt in the future; can't hurt!

Sauté sliced onion, zucchini, tomato and green chile (roasted/peeled hatch preferred). Pour into a casserole dish, top liberally with monterrey or colby jack cheese and broil until cheese is melted and bubbly.
Not terribly sophisticated, but a tasty, old family favorite.

I never put anything more than negra modelo especial, tobasco/cholula, salt and lime together. Family in Mexico taught me the simplicity of this combination is perfect as is.
