Suburban sprawl is much more incomprehensible to me...Phoenix or Las Vegas makes little sense to me. Look at this picture: http://www.thinkingwithoutoil.org/two/wp-content/uploads/2012/05/sprawl2.jpg

I'll say, however, that these pictures; be it Hong Kong stacks or Houston sprawl, cannot tell us about was is most important, what's inside the home. People for many reasons choose to live in places and ways that some of us cannot relate to, but we are all just humans, trying to make a life and find happiness. Isn't that so?

Jacques Pepin to the rescue!

I love this recipe from Fast Food My Way; the Brown Betty: http://www.thecookbookcritic.com/archives/2005/11/fast_food_my_wa_8.html

It makes use of left-over/stale bread and pastry as well as canned fruit. It says to use canned pear, I've used whatever was in the back of the pantry. (how'd that get there?)

Great results, easy to make, this recipe is a nice foundation for variations.

@SherryBinNH If you read the original post you'd notice that Kimberly stated, "I just bought a house with HUGE TALL McMansion stairwell walls". Arroyo et al were just playing-off her question.

@badpoodle I like apartment therapy and love it when there content is relevant. They have sites devoted to the kitchn, children, etc...why can't they have a site for large homes? I understand posts that feature large homes as inspiration for the apartment dweller; but watering down the content just to add to the number of posts is silly and counterproctive in the long-run. If I have to wade through irrelevent posts, I'll go somewhere else.

I value the content and comments on Apartment Therapy; therefore I believe this is constructive. Not simply snark.

@Unbeliever Thanks for the link, that looks like a great recipe. I must say though that the description uses terms like "creamy" and "airy". The following phrase "process the mixture until an improbably creamy mass starts to form. Depending on how loose you like your hummus, you can add cooking liquid and lemon juice", leads me to think that the level of creaminess varies by palate.
Traveling around the hummus-eating world, you'll find different levels of processing.

Our neighbors must have read this post because it's obvious they don't have rugs covering their wood floors.

Since they re-did their floors and got rid of the rugs (can't hide the floors!), we can hear every step they take and every word they speak. Yeah, like Phil Collins...only in our building.

Thanks.

Your post is illustrated with a bottle of "Pasa". This is the cheaper, artificial version of the "Posa" brand which is a natural vanilla extract.
Remember saying "pasa" in Spanish and shrugging your shoulders is akin to saying "it'll have to do". So pass on Pasa, and look for Posa brand.

I take the screen off and use it to make Mexican hot chocolate:
Drop in the grated disk of chocolate,
Add the water (just off a boil),
Stir with a spoon (I use a chop-stick),
Once it's all melted, pump up-an-down a few times to get a nice frothy head. If you don't hava a molinillo this works great!

How To Mince Garlic: The Video Home Hacks | Apartment Therapy The Kitchn

I was firmly in the camp of menudo and pozole being the only approved uses of hominy....until we watched the master Jacques Pepin put together this ultra easy Corn and Hominy Chowder. Here's the video: http://www.kqed.org/w/jpfastfood/recipes5.html

Ingredients
Serves: 6

• 3 tablespoons good olive oil
• 1 1/2 tablespoons chopped garlic
• 1 cup chopped onion
• 1/2 cup minced scallion
• 1/2 cup Green Hot Salsa or less for a milder soup
• 1 (14-ounce) can diced tomatoes in sauce
• 1 (28-ounce) can white hominy (about 3 cups kernels and juice)
• 1/2 teaspoon ground cinnamon
• 2 teaspoons ground cumin
• 1/2 teaspoon dried thyme leaves
• 4 cups chicken stock, homemade or low-salt canned chicken broth
• About 1/2 teaspoon salt (less if using canned chicken broth)
• 1 1/2 cups corn kernels (from 2 ears of corn)
• 1/2 cup (lightly packed) fresh cilantro, finely chopped

Preparation
Heat the oil in a large saucepan over medium heat and add the garlic, onion, and scallions.

Cook for 3 minutes, then add the rest of the ingredients, except for the corn and cilantro.

Bring to a boil, and cook for 15 minutes.

Stir in the corn and cilantro, return to a boil, and serve.

As he always says: "Das it!" (sic)

The way I've had it in Mexico is with the salt on the rim, not mixed in. Also, they used mezcal not tequila. Much more intersting, in my opinion.
