I use the end of a stick of butter to rub both sides of a tortilla. I can get a light, fairly even covering this way.

In a hot frying pan lightly crisp one side, flip, then quickly add cheese in a line down the center. When the second side is fairly crispy, I turn down the heat, fold over both sides (trifold), and continue heating until cheese is melty.

I like quesadillas with just cheese inside, and toppings outside.

It's been cold this week so I was in the mood for cold weather foods again. The butcher at my local store said she was seeing the mood shift in what people were purchasing.

I made Mattar Paneer last night for my daughter and a friend who love curry. All good except the paneer didn't hold together--sort of melted all over.

Roasting chickens were on sale so I have Chicken and Milk in now, and will put on a pot of chicken soup later that will likely wind up in the freezer.

I have bananas that need using up--some will become banana bread and others are headed to the freezer for blending with a little cocoa for after-school "ice cream."

I would plan and prep some meals at home on the weekend--perhaps bringing something frozen for Monday and combining ingredients in serving size portions.

If small appliances are permitted, I've found an electric skillet to be the most versatile appliance when cooking in our camper. Beyond the usual pancakes or occasional frying, I've used it do warm up leftovers, make grilled sandwiches, make potato pancakes, and even bake in. (For baking, place a wire rack in the bottom and cover the pan tightly with foil. Add water to the bottom of the skillet, cover, and cook. Texture is somewhat different but we haven't had any complaints)

I'm another in the life is too short for boring lighting camp! One of my garage sale prize finds is a double tabletop lamp that has a clipper ship as a base. It's fun and different, but on the downside it is a royal pain to dust.

Mine appears to be a lonely voice, but over the past few years I find myself turning more and more to online recipes. I feel like I can find new recipes without the expense and space of cookbooks, plus I really appreciate the reviews and suggestions by those who have tested the recipes. If I've had good results from trialing the recipes I've found online, then I'm more apt to go ahead and purchase the author's cookbook.

There are cookbooks I'll never give up because they are frequently used--a few standards, some church and family recipe collections, candymaking, and preserving. Other than that, I expect my cookbooks will come and go.

I've had a GE dishwasher for about six weeks now and so far I've been mostly pleased with it. It cleans far better than my Bosch ever did and has plenty of room for silverware, which is a big plus for me.

Reviews for GE dishwashers are mixed, but I loved their new color, Slate, so decided to give it a try. It's a deep sort of charcoalish brown and is very flexible. It doesn't have the fingerprint problems that stainless does. I really like it and will be buying a matching range soon.

I have a big Kitchenaid box grater that I use for bigger grating jobs, like a few cups of cheese.

For everything else, I use a vintage stainless grater with various grating sizes, like the one pictured on the left:
