Nearly all polenta will thicken and be somewhat tender within twenty minutes of cooking, though a longer time on the heat will produce a polenta with a creamier texture and more corn flavor. I typically cook mine an hour to an hour and a half.

I am making to barlotti bean recipe with polenta this morning and soaked the beans overnight per instruction. When I woke up early this morning all the beans had split. :(
Was I not supposed to soak this uber-fresh bean. aCk
