I am Dutch (from Amsterdam, Netherlands) and I have never heard of a pot called 'Dutch Oven'. Here in the Netherlands we don't use that word for what seems to be a normal cast iron pot. I thought it was similar to the modern enameled Dutch Oven (I have two of these from Le Creuset, so how Dutch is that?). However, I found out that there IS a difference, the modern enameled pots lose some of the advantages of bare cast iron ovens like the one that is shown in this post: you can't deep fry in them. But you CAN put them in an oven.

I am a guy.

Too many pillows, they have to move. Lots of gold stuff, don't like. Too many mirrored stuff. Cheap shine through curtains. Remove the birdcage. My girl can get the bed, too feminine.

I like the coffee table. Couch is ok. Like the newspaper wallpaper in the bathroom and the wine box shelf. The dead cow can stay.

Where's the TV?

Great place. Nice items, love the colours. The kitchen seems to be a little darkish. Maybe a mirrorwall from the floor to the ceiling, to replace the mirror that is hanging there, would brighten up the space and give it a larger feel.
I really like the rug, don't see the problem.

I buy flowers every week, but these prices freak me out, is that normal in the USA? Or NY? I am from Amsterdam, Netherlands, and for these two bunches I would pay 10 euro's max (13 dollar).

At first glance I thought this was a post from someone from the Netherlands (I live here) because of the big windows, white walls, lots of light, and a sort of minimalistic modern look with a few vintage items. I like it!

You already have pale blue walls, so I wouldn't choose more cool colours. An Oriental rug would be great, or something more neutral, grass material, a rug like this one here:

And thank you for loving my floor. It was one of the main reasons I bought the apartment, besides the lovely green view, in the heart of Amsterdam.

To answer the questions about the table, making this table was VERY simple. As I said, it has an IKEA under frame (Vika Moliden), and the top is made of multiplex (also called plywood). I ordered it at a building company, the material is often used to make concrete constructions of buildings, but it's also used as floor parts. I had two multiplex layers glued on top of each other, to get a thick top of 1.4 inches (standard is 0.7). They oiled the sides. It is very strong and water resistant. I has a white epoxy layer, which makes it very smooth, you can get it in many colours. And: it is cheap! If you plan to make this, get somebody to help you getting to under frame attached to the table top. It takes some strength to get the screws in.

To go back to your chair suggestions: I was really thinking about Thonets, they are nice to look at, but ... are they comfortable to sit on a whole dinner evening?

Wishbones are lovely, but don't fit into my budget, as some other design suggestions. Bouroullecs are a great suggestion. Actually now I am thinking about buying the basic dining chairs and painting these in brown, black, white or beige-green, all the same color or different colors, with a shiny finish. But I am still in doubt, so keep them coming!

2) 3 seater sofa facing the fireplace
(do not block the window with a sofa)
3) 2 armchairs in the corners next to the fireplace, facing the sofa
4) large coffee table in front of the sofa
5) sidetable in the size of the sofa directly behind the sofa, to put some books/magazines on, some art, flowers, etc
6) wall to wall bookcase against long wall behind sofa (between entry/foyer and kitchen nook)
7) large rug in front of the bookcase
8) large rectangle table in dining area
9) give the floor a good wax
10) get rid of the cabinet, it's an ugly focuspoint. Instead place a large side table or a side board to set the area aside
