I love fennel that's been lightly sauteed in some olive oil and salt (and butter, if you'd like it to be a little richer). I've put this type of sauteed fennel on top of hot dogs, served it with kielbasa and tossed it with pasta and shrimp (add some garlic and red pepper flakes if you did it this way). I think fennel pairs best with pork or seafood, but I'll eat it with anything! I have also thinly sliced fennel and frozen it and used it later (in a saute again, not raw), with no ill effects. I'm a meat-eater, but I made some delicious bean and cheese enchiladas from leftover vegetarian chili that I had frozen. I just reheated the chili in a skillet with some oil and smushed the beans like you would if you were making refried beans and than used that to fill my enchiladas. With some sour cream and guacamole, the enchiladas were delicious and so filling - it wasn't until the end of the week that I realized I hadn't eaten any meat in 3 days. I have a pot like this and have always used it make stock. It really is helpful on cutting down on the mess. And you are right, the stock does need to go through one more fine mesh strain before getting put in the freezer. I have one of these and it is all I've used for the last 3 years, but I honestly don't like it. A box grater just feels more natural to me and I often wished I owned one. Truffles. I know they are embarrassingly simple, but I've never made them on my own. Also, I've never made a layer cake on my own. A word of warning on the 9" round cake tins - ensure the sides are straight. A lot of the cheaper ones have sides that are slightly sloped, which means you'll have to trim your cakes anytime you layer them. Basically, if the cake pans stack easily inside one another, than the sides are sloped and I would advise against buying.
