I use up most of my stock making risotto, one of the easiest weeknight meals. A simple cheese and onion risotto with good chicken stock is a thing to behold.

These categories are ridiculous. If I were a winemaker, I'd be offended at the cubbyholing. It's worse than Trader Joe's!

I would guess that most of the people who read this blog are in New York City. It doesn't take much time or money to take full advantage of the amazing wine stores we have here, such as Astor and Warehouse downtown. I have a cabinet full of bottles in the $8 to $12 range that are reliably good, bought under advice from excellent salespeople.

I am all for making wine accessible, and I am no wine snob. But there's more to a glass of wine than "juicy." If you want juicy, drink juice!

If you use a food mill, there's no need to peel or core the apples. For liquid, a few tablespoons of calvados add another layer of apple flavor.

Food mill applesauce is a thing to behold. Simmer a bunch a quartered apples in a bit of water or cider until they are mushy, and pass them through the mill. No need to core, seed, peel, or sweeten them. I serve this on the side of every meal I make in the fall.

The people described in that article don't exist, and if they do, I don't want to know them. I cook every day, as do many of my friends, even here in New York. For all of us, it's about eating and enjoyment, not expensive olive oil and other worthless pursuits.
