Doing them in the oven is likely to smoke up the house, too. Here's a tip: in a smoker or other outdoor grill, heat wings seasoned with salt & pepper on high for about 15 minutes, until they start to drip. Turn heat to low and continue to render fat for about 15 min, or until dripping slows. Remove from grill and place on cooling rack with papertowels underneath to catch the drippings. Let cool to room temperature, then marinade in your fav. hot sauce - Frank's red hot contains no fat - (skip this step if your sauce contains sugar). Pre-heat grill back to about 450 degrees. place wings on pre-heated grill for about 15 min, turning once halfway through. Toss lightly in hot sauce or BBQ sauce.
