Dharma Trading carries place mats made out of recycled newspaper that could be sewn together to do this. http://www.dharmatrading.com/html/eng/3447717-AA.shtml
We used them for a low impact/recycled dinner party.

A big mirror would open the space up visually, or maybe as other have suggested a canvas stretched with a fun print fabric.

I would make a scrolling display box for it. You could display it on a mantel and it would look like it was in the bus originally. Now and then change the destination. A closed box would also help protect it from light damage, dust, etc.

You could also find someone to make a print/photo/photo copy of it that you could cut up or not and still keep the original until you have a better place/way to display it.

Red Red Red Red! White white trim. Make the red glossy. It will really pop and keep things from looking monochromatic.

I think it would be neat to have a shallow knife cabinet, just deep enough for the magnet stripes. The door(s) could be treated to double as a chalk or white bored. That way the knives are easy to grab, no drawer worries, and you don't have to think about them until you want them. A funky little cabinet also makes a fun design feature.
