The idea that sulfites cause hangovers or headaches is a common misconception that has been proven to be false. And even though sulfites are not added to organic wines they usually still have naturally occurring sulfites. Many foods have very high levels of sulfites - molasses, grape juice, canned tomatoes, dried fruits... and no one gets a hangover from those. You get a hangover from drinking too much and dehydrating yourself, and sometimes red wine bothers people (because of the tannins I think) but that still has nothing to do with the sulfites. This movie is really great, I thoroughly enjoyed it. I didn't realize how prevalent gleaning is even today, and it gave me all kinds of ideas. And it reminded me of my dad because he always keeps an eye out for abandoned apple trees and to see where asparagus grows alongside country roads. I have never used ones, but I know when it comes to something like growing grapes if you have soil that is too "nice" the roots won't grow as deep, the plants won't be as hardy, and the wine won't be as good as plants whose roots have to struggle a bit. A great free idea for making the switch to cloth paper towels and tissue: cut squares approximately the same size out of old cotton tshirts. I keep a basket in my bathroom for tissue and a drawer in my kitchen full of them for wiping up spills. Then I just toss them right into the hamper in the bathroom or laundry room.
