I'm a little scared of frying chicken myself - this tutorial makes it less intimidating.

As far as draining the chicken (or anything really) I've read suggestions to use cardboard boxes in order to reduce the use of paper towels and increase the reuse of boxes that might otherwise be just recycled or simply thrown away. Box suggestions I've seen are cereal boxes, pasta boxes, and the like. I thought it was a great idea.
