If anyone is vegan (like me) or just looking for a low-cal version of a gratin, try this recipe http://vegweb.com/index.php?topic=7126 for the sauce. I use it for everything from enchiladas to mac & cheese, but I also used the sauce to make potatoes gratin last thanksgiving and all 30 guests LOVED it. Then vegan cheese sprinkled on top of the gratin. Lately I've been mixing the sauce with homemade vegan pesto, too. Make-Ahead Dish for Entertaining: 10 Vegetable Gratins |

My cupboard is pretty bare so I whipped up a pot of beans and rice and it's been lasting me all day! So filling, so low-cal. Love it! Apartment Therapy The Kitchn | What's Cooking This Weekend? Weekend of March 28-29, 2009 |

I love using a box of TJ's mixed vegetable soup to make a quick, thick curry sauce. I saute cubed potatoes and frozen Quorn "chicken" tenders, add the soup and throw in any seasonings I want.
