Wow, congratulations, it's beautiful! I'm also short and would LOVE to have all that low-level storage in my kitchen. (Instead of constantly tripping over the step stool that I can't put away.)

"Dirt and unhappiness"! Yes! That's a perfect way to describe it. I'm another one who hasn't been able to get on board with the kale thing. I keep buying it and can't stand to eat anything I make with it, so it just feels like a waste of money and food to keep trying.

From a purely profit-minded point of view, it's also not in the mattress business' interest to sell you a high-quality product that you only need to buy every 15 or 20 years.

But yes, I think in general people really underestimate what a good mattress costs, and how do you even figure out what "good" is? Not all of us have the luxury of test-driving a bunch of mattresses to find the best one for us. You go eeny-meeny-miney-moe in your price range, and that's what you're stuck with until you can't stand it anymore or you can afford to replace it.

I have NO counter space -- about a foot wide on each side of the sink, and that's it. It really discourages any desire to cook because there's no room to spread out and make a mess. There's also a serious lack of drawers and cabinets (and as noted by a commenter above, I'm short and have a hard time reaching the high cabinets). I need to invest in some storage, but I can't decide what the best options would be, within my limited budget.

I have a nice-sized pantry, but it's become a dumping ground for all kinds of misc. things instead of just a kitchen-focused storage space. Blech! I'm in the process of cleaning it out as part of the Cure.
