I've made this with a good dose of coconut cream (not the artificial stuff in the little package, the fat from the top of the can of coconut milk before you shake it) and it helps the flavor a lot. As for texture, whipping it in your stand mixer or with beaters helps a lot, but its still more of a pudding. Use it as a filling in an almond tart crust!!

Ground flax is a fantastic egg replacer for vegan/egg free baking. 1Tbsp ground flax whisked with a couple tbsps boiling water = 1 egg. And you can see the consistency really looks and feels like an egg white. It also works well as a binder for gluten free baking and can be used to substitute where xanthan gum or guar gum is called for.

Are you diametrically opposed to using gluten free versions of products like bread and pasta? I have been gf for so long that I cant remember what real bread tastes like, but Rudi's brand is pretty decent and you could do any variety of sandwiches. I like roasted eggplant, tomato slices, and pesto for a hearty but not overly filling veggie sandwich. throw in some cheese depending on your comfort level there.

You can also do lettuce wraps with some nice ingredients: avocados, tempeh or baked tofu of some kind, etc etc.

HB eggs are a great idea, beth, except if you are worried about smelling up the bus. I personally would bring them anyway :)

mini frittatas and things like that also keep well (and taste good) at room temp. This might be more filling, and also a little easier to eat than lots of big containers of salads.

what about a thermos of soup, hot or cold? lentil? a cold pea soup with mint? etc etc. something not too chunky where you can drink it rather than spoon it.

I cooked for kids at an after school program for a few years. It was definitely challenging, and I totally agree that sneaking veggies in there is important.

A few tips: 1. make things bland: if you make chili, which can go over well, add significantly less spice than you might for an adult palate. 2. Finger foods are always winners.
3. make things look fun! 4. i second the dipping, even for fruit - make a yogurt/honey sauce.

meal suggestions (sry if i'm repeating, but i didnt read every comment): turkey meatloaf is good because you can sneak a lot of veggies inside. A pasta dish with some plain chicken breast, broccoli and carrots always went over well. just add butter olive oil and Parmesan. (Its basically the buttered noodles they love with some broccoli snuck in.)

Do some research as to what it is you really want to learn. Are you interested in the more architectural side of things or in color, etc. Get a copy of US News and World report listing, start calling the top schools to see what their specialties and strengths are. I am particularly fond of Pratt (I go there, for ID not for interiors) and the work I have seen has been more about public spaces than private homes. The students seem to have a really strong grasp of understanding abstract space and doing problem solving.

My personal favorite bathroom color is always some kind of muted celery. Calming and spa-like - the warmth of a yellowy green with bring out the earthness of the warm gray in the tile. It would be especially good if you added accents (like shelves, hooks, a little molding at the tile's edge, etc.) in a warm wood and kept everything else white. The two colors already posted are also nice, though. FYI when picking out these colors, on the chip they will look much more yellow/brown than you would expect, but on the wall they do read as green. Don't be scared, if you go to green, you'll really get green though.

I just went to the knoll website to look at the saarinen table again - my parents have the side table, and i love it - but i found this alternative that i also happen to really like and might be a little different for you. Its the Platner table. There's a coffee table, dining table (which youve probably seen) and side table.

First and foremost, however much i like noguchi, i'm over the table, and you should be too.

Here are a couple of tables from Umbra which i happen to like. (i have a personal affinity for umbra though, because they just awarded me with a prize.) One is a lucite table with some more curves to make it more fun and casual, the other is wooden and simple/ elegant.

A round or oval table like the saarinen table is classic and nice. In order to make the room feel less like an office you would have to add some nice orange accent pillows or something, though.

I would also go with a light yellow-green. Something in the family of light sage or celery. This will brighten the room and add the splash of color you need, but it will be more harmonious (and therefore calming) than the contrast of a blue or gray against the orange wood. The Devine olive is close to what i was picturing, but you could go significantly more yellow and a bit brighter. It would feel spa-like and fresh in an otherwise underlit room. Think about something that looks a bit brown and almost mustardy on the chip - on the wall it will look much more intense.
