I've been on a fried egg sandwich kick lately, and my fave one is a fried egg with fresh basil leaves, tomato slices, butter and salt & pepper on toasted french bread.

I, too, only buy unsalted butter. Why would I need salt in the butter when I add salt to dishes separately? I suppose my choice is for health reasons, but I've never had a problem using it in baking, or anything else.

I've also read that tomatoes and bread, when they mingle for a few hours like this, actually produce a kind of mold which is why the bread breaks down so quickly. It's best to bring your tomato slices separately, then add them to the sandwich once you're ready to eat.

Must be the weekend for potato leak soup! I'm making it for dinner right now, and this weekend I plan on making oatmeal raisin cookies with a glaze as well as granola. Kind of a mish-mash of winter and spring!
