I read about this in a book on sneaking good food into kids, but it works on me too.. a Tbs. of blackstrap molasses in a serving of cream of wheat. That's 13 mgs of Iron. I am on year two of having a 'mother' growing in the cupboard. I couldn't get my hands on a mother from a wine store or similar place, but managed to grow one by keeping a bottle of organic wine vinegar on the counter for several months. Making poached fruits and compotes this season has been making me very happy... it's a great way to use up fruit that's getting too soft. Yet another way to avoid wasting food -- I had a very bad habit of buying a pound of organic fruit and not getting through it all before it went into the compost bin. I don't feel quite so dismissive of the whole deadly mercury contamination's effects on my gray matter (and that of my future bundles of joy, if I am so blessed)... also after reading Bottomfeeder by Taras Grescoe tuna doesn't seem like a consequence free choice anymore. Yes it's entirely possible to get by without those ingredients -- as much as I enjoy tofu there are lots of problems associated with soy consumption. It sounds like you may be avoiding them due to phlegm and inflammation. Personally I eat a lot of dairy and eggs, however too much dairy is also hard on asthmatics so it's important to be careful with one's intake. Also I've heard a nutritionist talk about 'new vegetarian syndrome', where new veggies depend on dairy too much and end up with high cholesterol. One way to deal is to go with more digestible forms (yoghurt and non-homogenized milk) or goats milk (most palatable in chevre form..). I think it's the salt and smoke that we miss, the kind of full flavored satisfaction it brings. I cope with smoked tofu on TLT's :)... adding liquid smoke to split pea soup and other dishes that would have used bacon or ham, and by using chipotle puree in eggs and such. I had duck rillettes at a local food demonstration.. not really a fan. It is so oily! I found the somewhat slimy texture off-putting. But it may be that I have just lost my taste for meat after a few years of hardly ever having it. This vegetarian just ate Potato and Greens Mash-up with curly kale instead of dandelion greens and local organic canola oil instead of olive oil. I also had Belgian-style Seitan Stew with Dark Beer from Vegan Planet by Robin Robertson, made with homemade seitan and local Big Rock Traditional Ale.
