I have made this recipe without corn syrup. In fact, the original pecan pie recipe has no corn syrup in it either. Prevalence for corn syrup comes from historic General Foods advertising. This is a yummy recipe that also can be made without baking & eaten on the spot --- with wipeys for the fingers (skip the baking soda and the 250 degrees candy thermometer step; just bring to a boil & simmer for a few minutes, pour, toss, enjoy) . The sink is gorgeous. The cabinet colors are definitely hipster masculine. However, drawers above the stove hood ?!? He looks six foot six, and I guess those drawers work for him, but I'd guess others would find those drawers stylishly fun and practically useless. Sweet potatoes are a staple in the cuisine of many African countries and tribes. They can be boiled just like white potatoes, but usually boiled (whole or chopped) with skins on. Have you considered that there is too much liquid in this icing recipe and that's why it does not gel up well ? I would suggest reducing the milk to 2/3 cup and reducing the flour to 1/4-cup-less-one-tablespoon. It's a thicker roux, yes, but the proportions may be better to yield a less runny frosting. Wonderful recipe. Be careful serving fava beans to guests, though. Only serve fava beans to people who have eaten them once before --- because people who are allergic to fava beans die within hours after eating them. Google fava bean allergy and read the facts.
