some places; like Carlsbad New Mexico (of the caverns fame) have undrinkable water.

It's because there are LOTS of minerals in the water; because essentially the aquifer is more caves. (there are LOTS of caves in that region, not just the main caverns).

boiling it doesn't remove the minerals.

for example: I have a stomach issue (had surgery in college). I lived in the san francisco bay area for a while and drank the tap water there, no problem.

when I got to carlsbad, the tap water made me sick; I had to religiously drink bottled.

I used bottled for making rice and soup; but did use tap for pasta- where not that much water is absorbed.

what I would do with the water; re-use it to make rice (ie, re-use it once!); and freeze it in marked quantities (1 cup, 2 cups, 3 cups, etc)

I would also use the minimal necessary for pasta as stated above.

when I had stomache flu, my husband was drinking soy milk, and I instantly thought- "want!"; (all other food was the opposite).

it did help.

so, my advice is to look at foods, see if anything appeals.

for cookbooks, I recommend everything/anything by mark bittman. his recipes come out beautifully.

you can try mark bittman's suggestion of swapping out brown for white rice: parboil it first.

just take the brown rice, put it in lots of water, and simmer it for 25 minutes.

then drain it like pasta, and add it to the recipe.

I've had some success with this method. (you may need to see how long you need to parboil it, though)

the big thing for me is to not be militant; it just turns people off.

I tell people that " I started for the health of the earth, I continue for my health"; and then continue on (if they ask) with statistics on meat production (20 lbs of grain-> 1 lb of meat, water usage, land usage, waste management... etc).

and that I won't tell anyone else what to eat, and I don't want anyone telling me what to eat.

and any friend (one EX-boyfriend did this once) that puts meat on your plate is NOT your friend. (he loved meat...I became a vegetarian the week b4 we started dating; he acted as if I went veg to spite him...sigh...I'm married to a wonderful man now who loves his vegetables and is glad of all the weight he lost now that he eats meat 1-2x a week only)

if your roommate has ibs, I would stay away from corn products....corn can be a trigger for digestive problems.

veganomicon, also from isa chandra moskowitz (and terry hope romero) has some great bean recipes in it (mediterranean beans in tomato sauce) that is great served with rice,
and/or shephards' pie with tempeh (shephardess tempeh pie, iirc)

@canadian cook-> tofu is a sponge. it comes packed in water, so the sponge is already "full". One needs to empty the sponge by pressing it, then you can let it sit in marinade all day, then bake or fry it and it is amazing.

my trick is to press it in the morning when I get ready for work, and then put together the marinade (takes 5 mins), then let it marinade all day and fry or bake it when I get home.

one of my favorite recipes for the above is sesame tofu; from deborah madison's "vegetarian cooking for everyone"

if you eat meat, "skinny soups" is a win. it's not so good if you're a vegetarian, though.

I did the same thing the first time I made chicken soup!

what happened is that you boiled off too much of the water. Next time, simmer the soup so that it just barely bubbles. It'll come out better.

But as the other posters said, it's eminently fixable. Just add a few Tablespoons of water when you heat it up.

It's always best to add not enough, rather than too much water.

a make-your-own burrito/taco bar sounds great-> you only have to warm up the beans (and/or meat if you even provide any)

hopefully they give you the day before to cook and not also do work in the office.

i went to a vegan cookie swap last year; I got to try some great cookies; but there were pretty much only three types of cookies: chocolate, ginger, and peanut. since I cannot eat chocolate nor peanut; I didn't enjoy it too much.

it almost sounds as if people are expecting others to do things for them......doesn't sound too healthy. (in terms of wanting the swap to be a certain way)
