I cook for 1 also. I will normally follow a recipe and then freeze half right away for later. That normally leaves me with 2 servings: 1 for dinner; 1 for leftovers lunch.

I had sauteed diced veggies to pretty much everything I make: casseroles, pasta dishes, scrambled eggs, quiche, pasta sauces, rice (I add frozen peas/carrots mixture in the last 3-5 minutes of cooking), quinoa, soups, stews, etc. Even when I'm done sauteeing chicken on the stove top, I will throw a huge handful of sliced onions and peppers at the end to cook up in the last few minutes of cooking.

I buy eggs and let them sit in the fridge for a week or 2. After that, they are super easy to peel every time! Farm fresh eggs are much, much more difficult. You just have to think ahead and buy eggs in advanced and make sure no one else in the household eats them.
