I had sauteed diced veggies to pretty much everything I make: casseroles, pasta dishes, scrambled eggs, quiche, pasta sauces, rice (I add frozen peas/carrots mixture in the last 3-5 minutes of cooking), quinoa, soups, stews, etc. Even when I'm done sauteeing chicken on the stove top, I will throw a huge handful of sliced onions and peppers at the end to cook up in the last few minutes of cooking.

Start adding diced veggies to EVERY SINGLE dish you make. Scrambled eggs, rice, quinoa, jarred pasta sauce, casseroles, enchiladas, etc.

I buy eggs and let them sit in the fridge for a week or 2. After that, they are super easy to peel every time! Farm fresh eggs are much, much more difficult. You just have to think ahead and buy eggs in advanced and make sure no one else in the household eats them.

I make 1 big pot of beans per month (lentils, chick peas, vegetarian chili, etc.) with whatever is in season. Then I freeze them into multiple containers of 1-2 servings. Defrost as necessary.

@ec05 Trader Joe's sells great frozen brown rice. I open up the bag, put some in a bowl, mix in some frozen veggies, seasoning, and a bit of butter/oil then microwave according to directions. Perfect side dish every time.

I have cooked just for 1 for quite sometime. If I make too much of something, I will normally freeze it into double serving containers OR invite over friends! Everyone loves free homecooked meals!
