I just made nocino for the first time myself. I'd never heard of it before last fall, and now people are writing about it all over.

I live in Corvallis OR, and picked the walnuts around July 8th, which was too early I think. So, just last weekend I picked a second batch - which were more ripe, but the shell hadn't really hardened yet. Am hoping it's as wonderful as everyone says.

If it turns out this year, I'll try black walnuts next year.

We just use a stainless steel bowl (one of many that we use for various kitchen tasks). It's small, but super easy to clean and we always have one.

Granted, we dump ours up to twice a day because we use the scraps to feed our chickens...

Zipper? You've got to be kidding me.

Just make sure your apron has ties long enough to wrap around the front, and tie in the front. That way you've got a cord running all the way around your waist.

Now just hang one or two kitchen towels off the cord and you're good to go.

Works with any towel. No need for velcro or zippers or whatever.

Immersion blender all the way.

The footprint is so small (we keep ours in a corner of a cupboard right by the door), and it's tons safer than transferring hot (chunky) liquids to a foodpro or blender.

We just replaced our plastic Krups with a nice, metal Kitchenaid and have been very pleased.

They also work well for emulsifying salad dressings and making (the obvious) smoothie.

And, as a bonus, you can make David Lebovitz's easiest chocolate ice cream (wow, amazing).

The best use of coconut cream/milk I've found is to make coconut ice cream:

4 parts coconut cream/milk to 1 part sugar,
optional shredded coconut
chill in ice cream maker according to its directions

And the best place to get this stuff is at your local asian market, where you can buy the identical cans for as little as 1/3 of what you'll pay at the supermarket.

Oddly, my daughter (2.5) and I did make pasta this weekend. Some hand-rolled noodles on Saturday, then squash/hazelnut/caramelized-onion ravioli on Sunday.

My gripe is that the pasta machine is impossible to attach to the counter, and so cranking the machine is not easy at all. I wish they made one with a suction cup attachment (ala the apple peeler/slicer/corer) - it works so much better.

Regarding pasta sticking to itself - I had that problem the first couple of batches. I found the best remedy wasn't necessarily to add more and more flour while rolling (very messy), but instead to knead the dough a lot - adding flour when the dough ball became tacky - until it no longer became tacky. At that point (after resting), very minimal flour (maybe a teaspoon) was needed to roll out the sheets down to the thinnest setting without any sticking problems.

The hazelnut filling (if you care) was super simple, but very rich tasting:
2 C delicata squash (scraped from baked halves)
1 ea. large onion, diced and caramelized with 2 cloves garlic
3/4 C roasted hazelnuts, chopped fine
2 ea. eggs
salt and pepper to taste

mix and use as filling. enough for 40-50 ravioli

I answered, "No"
but in truth, I do use it all the time.

It's called seasoned cast iron.

And, as far as cooking eggs, I use an enameled pan, works well with a little bit of olive oil.

Mmmmm.... caramels

I just made a batch using sweetened condensed milk instead of the milk/corn syrup. I'll have to give this variant a try.
