Sheet pans!! Half sized, and quarter sized. I use them for everything: roasting chicken thighs and veggies, cookies, whatever. So useful.

I marinate chicken in it. Yogurt, whatever spices you want, bit of olive oil. It's sort of tandoori-ish. Right now I have it with green curry paste, lots of garlic, salt and pepper, olive oil. Roast as usual on a sheet pan. I've done it in zillions of iterations.

Cast iron skillet. I don't understand how everyone keeps saying it's nonstick. I've tried and tried seasoning, or cooking a bunch of bacon in it to grease it all up and all that happens is I get a huge, stuck-on mess the first time I try to fry some eggs. Sigh.
