This looks great. I'll join the chorus of those asking about substitutions - I'm wondering about the milk. Do you think I could use soy or almond milk, or combo of water and a bit of plain yogurt?

Washed spinach & kale in the clamshell, low-sodium canned soups & chili, microwavable rice - all of these keep me eating healthier and avoiding Seamless. I consider frozen veggies and canned tomatoes to be staples, because it's so difficult to buy and keep them fresh. I've been making the homemade frozen burritos from this site, and it works great! Healthier and tastier than the salt-laden packaged variety.

I'm always looking for healthy, affordable dishes that I can can make in big batches and bring to work for lunch each day. It's important that the entire dish can be dumped into one container and heated up (or not) - carrying around multiple components on my commute is a pain. Any recipes appreciated!
