Oh yes , they are delicious, and the best thing - here in Genova they cost around 2€ for half a kilo :)
@ sundaycook: do you know where exactly in Genova are they selling these stamps? I've never seen them around :((

New Favorite Pasta: Hand-Stamped Croxetti Discs

Homemade buckwheat fileld pasta! Make adough with 3/5 AP flour and 2/5 buckwheat flour, salt, eggs and water (for a total of 250 gr of flours I used 2 eggs and about 172 cup of water).
Let rest, roll out, fill with a mix of equal proportions of finely diced bresaola, mashed potato, ricotta, parmiggiano and whipped cream (unsweetened). Season with pepper and nutmeg, go easy on the salt as bresaola is quite salty. Serve with melted butter and some more parmiggiano. It's delicious!

Oh my, am I really the first one to comment? Well well, then, my plans for this month include:
- lots of homemade pasta - cacao pasta with gorgonzola sauce, ravioli with salmon filling served with citrus sauce, wholewheat strozzapreti....
- Risotto with artichokes
- The delicious-looking lemon-yeast folded cake published on this site some time ago
- The lemon-yogurt thyme-ginger cake I've just spotted in one of the previous posts

Surely sth more will pop up during the month - I'm really excited about the spring and all the fresh veggies coming!

Though I didn't make any of the recipes I was going to (Soft Pretzels were among them....), I had people over for lunch/dinner every weekend in February, so I tried several new dishes:

- The Big Sure Bakery Citrus Tart - the most amazing piece of cake I've ever had, taste- and look-wise (though not so good to take pictures of ... ), the leftover pastry is great for making thumb-print cookies filled with leftover citrus jam, too;
- Risotto with beer, fennel sausage and stracchino (italian creamy tangy soft cheese) - comfort winter food at it's best;
- homemade tagliatelle-pasta made with chestnut flour
- walnut sauce for wholewheat pasta from 101 Cookbooks - a sure keeper!
- Crespelle crepes filled with mushrooms and gorgonzola bechamel, topped with more bechamel and some pistacchios and broiled until golden - OMG!

This month, I want to make homemade cocoa pasta to eat with gorgonzola sauce...

Oh yes, potato pancakes!!!! In germany they are usually eaten with apple sauce, in my family we eat them savoury with sour cream and maybe some smoked salmon. Looking forward to trying!

After reading the manifesto in the tones of "We make manly cupcakes for manly man" I'd like to know whether the ones making thesse cupcakes are actually the men themselves as claimed by the ad. Nice ideas for homemade cupcakes though!

According to the topic of the post, I think men are less likely to eat grains, pulses, ecc, except it's in the chilli. I have doubts about milky desserts, too... Though my BF can devour several servings of freshly made warm vanilla pudding ... Go figure

I'm a bit confused .... I live in Italy, and normal "00" flour is hardly ever used for making pizza here, as the standard "00" has a low gluten percentage. For pizza/pasta making, here you either buy the flour that is named "manitoba" and is a "0" flour (at least 11% proteins), or you use a "00" marked as "Pizza Flour" that has a higher protein content than the generic "00" flour .... It hardly ever costs more than 1 € for a kilo .... I could never guess there were so huge diffrences between European/US flours!

Until 2 weeks ago, if there were like 2-3 forkfulls left on the plate and it still looked good enough to eat the next day, I just collected it for lunch (adding sth else for bulk), otherwise it went to the compost bin. Now we have a cute little piggie that eats virtually everything up to coffe grounds and tea bags (which I don't feed her, of course, or she'd get hyper-active), so food-waste problem is solved.

On my list are:
- Homemade Pretzels (I've been living in Germany for 15 years, so it's a real challenge to live up to German pretzels :)
-Filo-Hot milk pie that was featured here some months ago
-Red beets pasta with poppy seeds
-Scallion pancakes from this side
-Reuben-style bread from http://www.thekneadforbread.com/2009/04/03/rustic-reuben-bread/
