I put the meat in a large bowl of warm heavily salted water. In 20 minutes it's defrosted and brined.

I really like balsamic over an olive oil ice cream with dark chocolate chunks that I made recently. I know you probably don't have olive oil ice cream around, but try balsamic over chocolate chip ice cream. The vinegar brings out the fruitiness in the chocolate beautifully.

I quite like the Mexican style, but they're not quick at all. I found that it took weeks of pickling before the flavor really soaked in and over a month until they really tasted right. But once they did, they're darn good.

I've found that substituting coconut milk for some of the cream in a Philadelphia-style ice cream improves the texture. If you don't like the chewiness of Phily-style and can't be bothered with either custards or Jeni-style (which also works quite well), it's an easy fix.

Personally, I find it hard to watch Top or Iron Chef without pausing part way through to head into the kitchen and throw something together. Snacking on some innovative creation of my own lets me appreciate the shows on a higher level with valid opinions on the goings-on instead of as a passive observer.

Check your brand of ramen. Some are fried, but some aren't and there's a huge difference in the level of fat. Udon, of course, is never fried so that's a good option too. Check out the selection at your local Asian grocery and you'll find some healthier options and things like fishcake and snow-dried tofu to add some nutrition. It'll cost more than Cup Noodles but if you don't go for the fanciest ones you can stay under a couple bucks per meal.

I made this recipe a while back and wasn't really wowed by the marrow but I did really like the parsley salad. I got my marrow bones frozen at Whole Foods and I wonder if the freezing or the (probably) factory-farmed cow they came from killed the flavor Bordain loves. I'd like to try it again if I can get ahold of fresh veal marrow bones to use.

I'm in Miami so my CSA is about to start up for the season. Last year I had a bit of difficulty keeping up with the vegetable onslaught, and I'll admit that I did waste a good bit of lettuce, but my cooking blog was very helpful in getting me out searching out new and interesting recipes and keeping cooking it all. It's like telling your friends that you're quitting smoking; the public pressure keeps you on the right path.

Jeff's mini cornbread things got plenty of love. They were chorizo spoonbread and the judges liked them better than the chicken. My prediction for the season: chorizo is the new bacon.

And Fabio's dish was lame: classic Italian is not New American even if you gussy it up with a trendy molecular gastronomy trick.

Frozen (and then defrosted) bananas substitute beautifully for eggs in ice cream. They give a great texture to the ice cream, eliminate all cooking from the process and lower the fat content. Or they can boost the creaminess of a sorbet without adding any fat or dairy products.

Plus bananas work with a lot of widely varying flavors. I've been experimenting with different banana ice creams for a while now. You can see a bunch of recipes on my blog if you click through to my profile.

I picked up a set of cheap thin plastic cutting sheets color coded the same way that I lay on top of my wooden cutting board. They're nice because they can all hang from one hook when not in use and I can curl them up to funnel whatever I just chopped into the pot.

I like to make mine with dried shrimp, shiitakes, chinese sausage and scallion to make a sort of liquid version of dim sum sticky rice, but it's good with just a bit of soy sauce and sesame oil too.

I've got a couple of questions.

First on baking: I started using the no-knead recipe last year but have become confident enough to start kneading with my mixer and trying different recipes. Now I'm wondering about the other half of no-knead: baking using a dutch oven to hold in the steam. The high temperatures and long baking time in the no-knead recipe are worryingly more than most standard recipes call for and I could use some advice on how I should be making adjustments.

Second, I recently bought a small jar of foie gras, just a couple ounces, and I really don't know what to do with it. Is preserved far inferior to fresh and if so, how do I compensate for that?
