i had one a few years ago. one day while cleaning the floor, i turned it over and there were tiny little bugs crawling over the bottom, no mildew, but bugs. into the trash it went. we have a regular mat and never had the bug problem again.

I also do this but place the veggies in a plastic colander and then the colander in a larger bowl to catch the water so the veggies don't sit in it for too long.

I'm not really sure how economical this is - $60 for the bottle, then $50 for 10 CO2 chargers, plus shipping for the chargers if you can't find them at a local store. Soda water costs $.79/1 liter at my bodega and we return the bottles to get recycled and get the deposit back. This site has a better option http://www.sodaclubusa.com/default.htm.

I made this dish with kale and it turned out fantastic! I cooked the kale a little longer as you suggested and added about ½ cup of chicken stock to help it out. Thanks for the guidance!

Hi Palmetto,

We get 1 delivery a month during the winter, so it tends to be a hefty amount of produce. The good thing is that this has forced me to make meals in advance using what we have available and storing meals in the freezer. We made a batch of Veselka's cabbage and pork soup and the braised cabbage from the kitchn.
