So am I correct that you're just slicing the lemons and including the pith because the pith is thinner on Meyer lemons and won't make the filling bitter?

Also, if that's the case, could you hypothetically slice these using a food processor's slicing attachment?

Love the idea of polenta pizza crusts! I also like using chickpea flour crusts (aka socca) too. Have you ever frozen the polenta crusts? Do you bake them first?

This looks good. I'm wondering if there is a way to translate it into a gluten free recipes, perhaps using brown rice or some other whole grain instead of the pasta. Do you think you could substitute an equal amount of cooked rice for the pasta?

The Tate's Bake Shop Cookbook has a great recipe for homemade energy bars using oats, nut butter, and apple butter. Delicious, and the bars have more protein and fiber.
