I am not sure how you like to work vertically with an easel or more horizontally. If you do like working with an easel I wonder if you could rig up something using a rolling rack - maybe a garment rack with wheels you can lock down - but then you can roll it around when not in use. I have though about setting up a painting area myself (in rentals). I was thinking that if I was working near a wall I might want to pin up painter's plastic against the wall surface for protection. Now walking on plastic might be dangerous - maybe to protect the floor you want a sacrificial rug or modular floor tiles (depending on what your floor is underneath). Sounds like fun - I hope you find some methods that work for you.
