When I make a cake(very often)I prefer to beat the eggs until bubbliest then add dries ingredients very slowly.This make the cake voluminous.

Definitely electric mixer;the only way to make fluffy airy preparations:sponge cakes waffled souffles meringue(pavlova)cupcakes roll cakes.All based in beaten eggs.I would add a pretty slotted spoon for dries ingredients to mix in the batter

I have a Chinese slotted spoon which I use for sponge fluffy preparations like sponge cakes waffled cupcakes souffles etc.It is more suitable at these stuff.It leaves no lumps in the batter.
