Agree with Mrs Type A about letting the dough rest while braided before putting in the oven. I can't speak to the link she included but it looks good. When I bake it, I braid the dough, then let it rest for about 20 minutes on the baking sheet with a layer of saran wrap resting on it. It's not wrapped tightly, just barely on top.

Challah bread baking does depend on your specific recipe and even the humidity of your home/oven but that may not be your specific issue. When I first read the question I immediately imagined the loaves were coming unbraided at the ends during the baking process. IF the latter is the case then this is my advice because it's what I do:

Start braiding the dough but don't pinch the ends together, just start braiding about 1/4 of the way down the strands. When you come to the other end, pinch the last bit of dough on each strand together so you couldn't differentiate between the strands and then tuck this under the loaf. I do this pinching when I have about 1-2 inches of dough left on one strand or one ends abruptly before the other. Go back to the other end and braid it backwards so it looks all evenly braided, pinch the ends together like on the other side and tuck under the loaf. Now I would put it on the tray, cover lightly with saran wrap, wait 20ish minutes, and bake.
