Calphalon commercial anodized aluminum. The non-non-stick kind. I've had one of the "everyday" pans for several years, and once it's seasoned like cast iron, nothing sticks, ever. Anodized aluminum. I've been using one of the commercial line Calphalon "every day" pans ... every day. One Sunday morning I put water on the stove in our lovely old copper teapot and went inside to check email. Two hours later when I came back to the kitchen, the water had all boiled out (duh) and the spout had unsoldered from the now red-hot pot. I ordered an electric kettle that day, a Chef's Choice from Amazon. Three years later it stopped working with an accompanyingly horrid electrical smell ... and Edgecraft, who makes Chef's Choice, replaced it with a new and obviously improved model for free. Love it! Aliens that smell like chocolate. Maybe that Mexican chocolate, with the hot peppers, that would be good. Or ginger. The aliens, not the chocolate. As for music ... Sun Ra, of course, unless they're from Saturn because Ra had this really bad weekend there once and they still haven't forgiven him.
