You pretty much summed up what I was going to state, however there is a chance they did demo a Wii U. From things I've read about playing Mario Bros U, the game is mirrored on the game tablet with no additional support from the second screen in this case. While this is technically comparable, the big thing here was the thought of finally making your console game portable in times that another person wanted to watch something on the TV that would have otherwise been used by a console.

However, the overall purpose of the tablets screen is a complimentary screen with additional functionality or information readily available for the gamers use (as seen in other launch titles: ZombiU, Black Ops2, Arkham City: Armored Edition, Mass Effect 3). In that sense, Air Play or other mirroring functions do not give you the Wii U experience.
