Barlowgirl: So much depends on the size of the leeks and how much white/pale green you are able to use. The above amount came from 3 fat leeks which yielded about 4 cups of leek moons. They cooked down to about twice the amount you see above. DV

The bread is from Starter Bakery. They sell mostly to East Bay cafes and are at the Temescal, Albany and Grand Lake Farmers' Markets over here. I've heard that farmtable in the TenderNob will start carrying their stuff but I don't know if they'll have the bread. But it it's well worth the trip over the bay to get some -- you can pick up a few of the soon to be famous kouign-amman pastries while you're at it.

Not something I would want to eat off of or rest my silverware on.

Sometimes there's enough butter in the batter to keep it from sticking too badly. If not, you can always just spoon it out. You may not have a nice presentation with perfect slices, but the most important thing is that it tastes good.

Persevere! Don't give up!

Bonus: I'll bet you'll never again forget to grease your pan.

I, too, am shocked at the omission of any of the Moosewood cookbooks. And I'm also a little shocked to see The Savory Way in a "vintage" article. Oy, am I that old? When I think of it further, however, I am even more impressed with Madison's culinary vision, for there are recipes in The Savory Way (and in VCE) that are still fresh and innovative today. And it was published (sigh) 18 years ago!
