I burned my hands, 30 years ago, making salsa for the first time. My hands were on fire: I tried soaking them in ice water, milk, scrubbing with baking soda, lemon, assorted creams. We finally called the emergency room, and they sympathetically said, 'there's nothing you can do: it will wear off in 4-6 hours." That was no comfort. That week I got my canning manual from Bell Jars. In fine red print, on pg. 20, it said, 'Caution: wear rubber gloves when working with jalapeno peppers.' Today I am still deathly afraid of jalapenos. I won't go near one, without rubber gloves on. I slice, scoop the seeds out with a spoon, and continue on." I apologize. I sound like a grousing old woman. Unfortunately I've been imprinted lately by my mother-in-law, who says she won't look at a recipe that calls for more than five ingredients. Well, as interesting and intriguing as this recipe sounds, this young couple with kids, has to find a way to cook a spectacular dish, quicker, and with fewer ingredients. Busy people just do not have the time to cook this way. Also, in my opinion, all the time spent at this, when a meal gets eaten so quickly, and seldom remembered, is not worth all the trouble. 30 years ago, a Chinese friend would host little Chinese lunches for me and another neighbor. She would never let us help her do the dishes. One year I finally found outwhy . She liked doing the dishes the 'Chinese' way: to conserve water and soap. Same idea. Water in a coffee cup, squirt of soap. I use the green 3M scour pads, dip, scrub and rinse. Voila!
